Some of the best things on the menu were never supposed to be on the menu

Take the pizza. The kitchen has a panini press and a convection oven. No fryer, no grill, no pizza oven. When the building was built out, the original ownership had a clear vision of what the café would and wouldn’t sell, and pizza wasn’t on the list.

Today it’s one of the most loved dishes the café makes, with the style changing weekly depending on whatever the café manager dreams up.

That story isn’t really about pizza. It’s about what happens when your dining partner says yes instead of “let me check with corporate.”


A café built to bend

Multi-tenant dining is its own discipline. The café has to serve four different employer cultures inside one building, draw business from two anchor tenants next door, bend with hybrid schedules that make Mondays a whisper and Wednesdays a sprint, and hold quality through ownership transitions, tenant layoffs, and a pandemic that rewrote the rules.

When a new property management firm took over in August 2023, the team had a clean opportunity to switch dining providers. They didn’t.

  • Tenant events, fully owned. Red Sox opening-day raffles. The year-end holiday gathering. Two summer ice cream socials. None of it in the contract.
